2 kg of pork leg
Soaking in
2 l hot water
200g Demerera sugar
100g salt
123g Davalade
7g dried lemon peel
After four hours it looked like this
then it was dried, slathered in stuff and had to wait for the egg to hit the 'undred
½ time and it looks like this
after 4 hours it was up to 87°C so out it came. The waffley thing is all the fat and gunge that stuck to the griddle.
