Health Duice

Dickle 3
The endless quest for the perfect sandwich pickle

Peel and slice the mango, cover with salt and leave for a few hours. Rinse and drain well
Chop eveything into little bits
Briefly sweat the onions, garlic and ginger in a little oil - low heat, lid on, don't brown
Mix in the sugar, stir in the vinegar, simmer for 10 minutes
Add the rest and simmer until done, around 40 minutes more
Taste, add extra shot of lemon juice
I used 250g sugar to balance out the onions, it's a bit sweet probably because they're red so use a bit less
Vinegar seems to be about 1½ times the sugar so I used 400ml
Filled two 450g jars

DIY egg rings
A lot of people have asked me about egg rings
Make your own with some aluminium foil and a couple of staples
and no washing up.
p.s. make sure that you use food safe staples...
